Here at Bee’lixir, we make a variety of green tea and honey kombuchas known as Jun. One of the key features of the product, aside from the inherent probiotic content and antioxidant polyphenols present in the tea, is the use of local honey in each batch. We strongly feel the need to support the honey bee industry as so much of our food supply is dependent on these lovely ladies to pollinate crops. That and supporting local businesses is something that everyone should strive to do! Wink wink nudge nudge.
Jun, like kombucha, is a fermented tea beverage utilizing a Symbiotic Culture of Bacteria and Yeast, or SCOBY, that converts the sugars in the tea to several organic acids thereby giving its tart flavor.
While kombucha is a blend of predominantly black tea and sugar, Jun is made with green tea and honey. The use of honey and green tea provides a lighter color and flavor compared to Kombucha. However, there is a greater bouquet of flavors and aromas provided by the honey being used, which of course is heavily dependent on the variety of honey used. The final product is also more effervescent than traditional kombucha that, in addition to the flavor and aroma, results in a more refreshing brew
In addition to the antioxidants present in green tea and the probiotics provided by the culture of Jun, Bee’lixir uses local raw honey from North Carolina to support the beekeeping community in the area, which in turn provides an important role in food production.
